"Nibotan" is a simmered pasta with a lot of taste, created by chef Isami Takayama of "Calneya" who created a new trend of aged meat. When making a dried sardine sauce that goes well with meat dishes, the head and the cotton of the dried sardine that are not used in the sauce are flaked, and it is a dish that was designed to "match the pasta".
